Norma's Bread Pudding
A well-known dish served at a small chain of cafes called Norma's in Pensacola, Florida. Everyone that has a taste keeps going back for more. There are three sauces that go well with the pudding...you just have to decide which one suits you the best.

Ingredients
3 1/2 cups sugar (granulated)
4 cups of milk
12 large eggs, beaten
1 tsp salt
1 tbsp vanilla extract
3/4 shredded unsweetened coconut
1/2 cup (1 stick) margarine, melted
10 cups 1/2 inch cubes of French bread
*Flavored Sauce
Directions
Combine the sugar, milk, and water in a bowl and mix well. Add the eggs, salt, vanilla, coconut and margarine and mix well. Stir in the bread cubes. Let stand until liquid is absorbed. Spoon into two 9x12-inch baking pans.
Bake at 350 degrees for 35-45 or until pudding rises like a souffle and springs back when touched. Serve with Flavored Sauce*
*Sauces (amaretto, whiskey or lemon)
4 whole eggs or 1/2 cup egg substitute
1/4 cup amaretto-or-1/4 cup whiskey or 1/4 cup lemon juice (just use one)
2 cups confectioner's sugar
1 cup (2 sticks) butter *melted!!*
