Mango Avocado Salsa
I discovered this amazing mango salsa recipe about a month ago on allrecipes.com and have been making it weekly...it's that good!! We have had it on fish, chicken tacos and with chips... So fresh and healthy. I omitted the red bell pepper and added cilantro... Mmm Mmmm Mmmm
Ingredients
- 1 mango - peeled, seeded and diced
- 1 red bell pepper, seeded and diced
- 3/4 cup chopped red onion
- 1 tablespoon white sugar
- 1 tablespoon olive oil
- 2 tablespoons white wine vinegar
- 1 avocado - peeled, pitted, and diced
- 1 teaspoon salt
Directions
- Toss together mango, bell pepper, onion, sugar, olive oil, and vinegar in a bowl. Gently fold in diced avocado, and season with salt.
Costco has really good mangos right now reasonably priced!!
