Pesto, Shrimp and Goat Cheese Pizza



I found this recipe the other night and decided to try it.....it was delicious and another great way to use up all the basil pesto I'd  made.  



Pesto, Shrimp and Goat Cheese Pizza

4  pita bread pockets, I used garden herb flavored ones from Costco
8-10 shrimps without tails, sauteed
1 tbsp butter
1 garlic clove, minced
1/4 c basil pesto
Goat Cheese, crumbled
artichoke hearts, optional

Top pita bread with basil pesto and set aside.  Saute shrimp in a bit of butter and add in some fresh garlic to taste.  Top pita with cooked shrimp, and crumbled goat cheese.  Also chopped artichoke hearts if you desire.  Bake at 400 degrees for about 20 minutes, or until the cheese starts to brown and bubble.  
Transfer to a plate and enjoy!
