Chicken Tortilla Soup
This recipe comes from one of my Mother of Preschooler (MOPS) cookbooks. Always a great place to find a tried and true recipe--easy and yummy.
2-3 chicken breast, cubed
2 cloves garlic, minced
1 (10 oz) can diced tomatoes
1 (10 oz) can tomato sauce
1 can green chilies
2 cups corn
2 cans beans,drained and rinsed (I used pinto and black)
28 oz chicken stock
1 tsp salt
2 tsp cumin powder
1 tsp chili powder
1/8 tsp ground red pepper
1/8 tsp black pepper
Combine all ingredients above into a slow cooker and cook on high for 6 hours. Serve soup over tortilla chips and with a dallup of sour cream and cheese.
