Classic Turkey Bacon Club
Ok, this is probably my husbands favorite thing to eat...and there isn't even any red meat in there..well of course there's b-a-c-o-n!
Simple, but so delicious...
1/4 pound of premium turkey from the deli (boars head or Wegman's honey turkey)
2-3 slices of bacon, cooked until crispy ( I cook mine in the oven*)
3 slices of your favorite bread (we use Wegman's apple nut bread)
mayo
on the vine tomato, sliced very thinly
lettuce (iceberg not for its nutritional value but for its crispy crunch)
sharp cheddar cheese, optional
Toast bread and lather some mayo on one side of two of the slices and both sides of the slice for the middle.
lettuce goes on the bottom then tomato,next middle slice of bread and then bacon and turkey and then last piece of bread tops it....
slice in half and then again in half and your should have 4 small squares. Place toothpicks through to hold it all together. Garnish with fresh fruit or chips.
Serve!
* Line a rimmed cookie sheet with foil. Heat oven to 400 degrees. Place bacon on the cookie sheet and pop into oven right away (even before it preheats) it takes about 15 minutes to cook. Remove from oven and transfer bacon to a plate. Best of all easy clean-up just fold foil up and toss into trash.
