Chicken Souvlaki and Tzatziki
- This was so delicious....it was so tender it melts in your mouth. Pair the chicken and tzatziki with warm pita for a wonderful meal.
- Ingredients:
- 2 pounds boned, skinned chicken breasts, cut into 1 1/2-in. cubes
- 1/4 cup olive oil
- 1/4 cup dry white wine
- 2 tablespoons lemon juice
- 2 teaspoons chopped fresh oregano leaves
- 4 garlic cloves (2 crushed)
- 1 teaspoon kosher salt
- 1/2 teaspoon pepper, divided
- For the tzatziki:
- 16 oz. Greek yogurt
- 1/2 hothouse cucumber or 1 regular cucumber, peeled and seeded
- 2-3 cloves garlic, pressed through a garlic press (or finely minced)
- 1 tsp. white wine vinegar
- Salt and pepper
- Squeeze of fresh lemon juice
- Extra virgin olive oil
- Preparation
- 1. Heat grill to high (450° to 550°). Mix chicken, oil, wine, lemon juice, oregano, crushed garlic cloves, salt, and 1/4 tsp. pepper in a bowl. Add the chicken and marinate for 30 minutes to 1 hour.
- 2. Thread the chicken cubes onto skewers. Grill chicken, turning occasionally, until grill marks appear and meat is cooked through, 10 to 12 minutes.
- 3. Finely chop the cucumber then place in a kitchen towel and wring out any excess liquid. Transfer to a medium bowl. Add yogurt, minced garlic, salt and pepper to taste, and the vinegar and mix until combined. Serve with chicken and warm pita bread.
