Leftover BBQ Chicken Salad

While visiting my dear friend Rebecca down in fabulous Charlotte, NC~I was treated to a week of delicious food, homemade by my hostess extraordinaire.

This was my favorite.

1-2 grilled BBQ chicken breast, cut into bite size pieces
2-3 tbsp mayo
2-3 tbsp poppy seed dressing
2-3 tsp celery seed
2-3 sweet pickles, diced
1 hard boiled egg, diced
salt and pepper to taste

Mix of all the above ingredients (taste to make sure the amounts are OK) and chill in the refrigerator for a few hours. Serve on sourdough bread or crackers. Great with sweet tea, of course.
