Zucchini Bars with Cinnamon Cream Cheese Frosting

This recipe was my friend Emily S.'s Grandma’s and is a great way to use up all that extra zucchini that seems to spread like wildfire in your summer gardens.

2 cups sugar
1 cup apple sauce - unsweetened
4 eggs
2 tsp cinnamon
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 tsp vanilla
2 cups whole wheat flour

In mixing bowl mix all the above ingredients, adding flour last, mix well with a spatula, fold in the following:
2 cups zucchini - shredded
1½ cups walnuts - chopped
1½ cups dried cranberries.

Pour into well greased 11x17” baking pan and bake at 350 for 30-35 mins (it will pull away from the sides slightly, if you greased the pan well)

Frosting:
1 stick butter
3 tsp vanilla
6 oz cream cheese
1 tsp pumpkin pie spice
1 tsp cinnamon
6 cups confectioner’s sugar

In mixing bowl mix all the above ingredients, slowly adding the sugar last and mix well until smooth and creamy. When bars come out of oven, let cool to room temp (at least an hour) then spread frosting over top of bars and let sit for about 20 min. (Frosting will set) cut, enjoy! repeat!
