Sweet Pork Tacos

I found this recipe on one of my new favorite food blogs...My Most Delicious Recipes (link below).  I love any reason to use the slow cooker and I must say this was delicious.  The brown sugar and salsa cook all day with the pork roast and make for a very tangy, sweet flavor.  I put out rice, beans, Monterey Jack cheese, crisp, chopped iceberg lettuce, diced tomatoes and of course the yummy green sauce.  There's plenty of leftovers so we will be having this again for lunch tomorrow.  Enjoy!!


1 pork roast
2 cups salsa
2 cups brown sugar
Combine above ingredients in crock pot; cook for 8-10 hours on low or 6-8 hours on high.


GREEN SAUCE:
1 1/3 cup sour cream
¾ cup mayonnaise
1 small bunch fresh cilantro
1 pkg. dry ranch dressing
1-2 cloves fresh garlic, crushed
1-2 dashes Tabasco
4 Tbsp salsa Verde
1 lime, juiced
Combine all ingredients in blender and blend...yeilds: 3 cups

ADDITIONAL FILLINGS:
Rice
Tortillas, soft
Cheddar cheese, grated
Black beans
Tomatoes, diced
Lettuce, chopped

An hour before serving, take roast out and shred with fork and knife. Put it back and heat until serving time. Wrap rice, pork and other ingredients in tortilla. Put green sauce on last and roll up tortilla.

  1. this was delicious I would cut the pork roast in half next time...we had so much. It would be great for a party...easy and self serve.
