Grandpa's Butter Cookies
These cookies have been a part of almost every Christmas for as long as I can remember. My grandfather used to make them every year. They are delicious, easy to make and perfect with a cup of hot tea.
1 lb unsalted butter, softened
2 cups sugar
4 eggs
1 tsp baking soda
5 cups flour
nuts, optional
In a large mixing bowl mix the butter and sugar together until combined and creamy. Add the eggs and mix thoroughly. Add baking soda and 2 cups of flour and mix until combined. Add 1 cup of flour at a time until mixed together and it should form a nice batter.
Spoon about 1 c of batter onto a piece of wax paper flatten and roll up in the wax paper. Repeat this until all the batter is in wax paper and flattened. Freeze until firm.
Preheat oven to 350 degrees.
Remove wax paper sections from freezer one at a time slice thin sections and place onto cookie sheets and bake for about 10 minutes or until lightly browned around the edges.
