Leftover Ham Bone Soup
Not much different than the U.S. Senate bean soup I used to eat almost everyday when I worked on the Hill, you can add diced potatoes to make it a little hardier. The bone gives it a wonderful flavor. Great for the Winter months ahead.
4 cans navy beans or Northern Beans, drained
3 qt. water
1 ham bone, with a bit of meat. Cut up the extra meat into bite size pieces.
1 c. celery
1 med. onion, chopped
4 carrots, sliced
1 tbsp. salt
Pepper
Put it all in a slow cooker for about 6-8 hours on low.
