Edamame and Whole Wheat Pasta


I made this last night and it was delicious...you can leave out the shrimp or substitute for chicken. This is a great example of a high fiber meal. The whole wheat pasta has 6 grams of dietary fiber and the soybeans have 8 grams. The calories are a little higher, but the points aren't too high. I wish I'd taken a picture it was so colorful.


Ingredients:
whole wheat pasta, cooked (make enough so that the kids can have butter and cheese on top of theirs)
frozen edamame (soybeans) shelled, steam in micro 8 minutes (my kids liked these too)
marinated artichoke hearts, about 4 quarters
black olives, about 6
shrimp or chicken, optional
1 tbsp oil
1 garlic clove.minced
splash of lemon juice
tomato, sliced

1. Cook pasta and drain
2. Steam edamame
3. Saute shrimp in the oil, garlic and lemon juice until pink
4. Toss one serving of pasta in the pan with the shrimp, mix until pasta is lightly coated.
5. Serve in a bowl and top with edamame, artichokes, black olives and tomato
