Sunday Chops and Stuffing

I make this recipe a couple of times a year.  I stumbled upon it while sitting in the waiting room at Wilford Hall on Lackland AFB, TX.  Ernie was there getting PRK and I was about 6 months pregnant with William.  I jotted it down on a notepad, from Ernie's backpack, and it is now one of his favorite things to eat!!


6 cups of Stove top stuffing, prepared as box describes
1 cup vegetable oil
6 chops, thinly sliced without bone
2-3 granny smith apples, cored and sliced thinly
1/4 c brown sugar
1/8 tsp pumpkin pie spice
2 eggs
2 cups of panko bread crumbs



Prepare stuffing and place into a 9X13 dish.  Heat oil in a skillet over medium-high heat.  Salt and pepper chops, dredge through egg, and panko breadcrumbs.  Saute in oil until brown and crispy.  Set aside on a few paper towels to soak up excess oil.
Place apples in a bowl with brown sugar and pumpkin pie spice.  Toss until all apples are thoroughly coated.
Arrange chops and apples on top of stuffing.  Bake at 375 degrees for 30 minutes.
