Tomato Pie
While in the deep south last weekend...I went to lunch at a little cafe called The Sugar Kettle in Daphne, Alabama between Mobile and Pensacola. I was thrilled to find the recipe on their website because it was so delicious. Besides the pie they had lots of down home southern-style food like fried chicken, turnip greens, mashed potatoes, chocolate cake and cornbread.
Ingredients:
1 round pie crust
1 cup shredded mozzarella
2 or 3 tomatoes (peeled & sliced)
1 cup shredded cheddar
1/2 cup green onions (sliced)
1/2 cup fresh basil (chopped)
1 cup mayonnaise
salt and pepper, to taste
Layer tomatoes, green onion, basil, salt and pepper to your own taste inside
pie crust. Mix mayo and cheeses. Spread on top of ingredients in pie
crust.
Bake at 350 degrees for 30 minutes.
