Grandpa Grube's Butterscotch Bars
These delicious squares have been a favorite in our family for many decades. Easy to make and always a hit. When you bring these to a party go ahead and write the recipe down beforehand to hand out because everyone will want it.
Crust:
1 box butter pecan cake mix
1 egg, beaten
1 stick butter, softened
Mix cake batter, butter and egg well until it's like dough. Press into a 9X13 inch pan.
Filling:
1 box powered sugar
1 egg, beaten
1 stick butter, softened
1 (8 oz) pkg. cream cheese, softened
1 c. chopped pecans
Mix the powered sugar, egg, butter, cream cheese very well in a mixer. Pour over crust and top with pecans. Bake at 350 degrees for 45 minutes. Cool well and then cut into squares.
Notes: Delicious served al a' mode.
