Shortbread

1 1/2 stick butter, room temp
1 3/4c flour
1/4 tsp salt
1/2 tsp vanilla
1/2 cup sugar

Cream butter and sugar together, add vanilla and mix well... sift flour and salt together and add to butter and sugar mixture. Mix on med speed until dough starts to come together in ball. Take out... spread into pie pan about 1/2 in. thick. Bake at 350 for about 25 min- 30min or until starts to lightly brown on top. Slice into wedges while still warm. Cool completely. (It will crumble if you don't) I like mine a tiny bit soft in the very middle. If you want it sandy in texture... bake at 325 for about 30 - 35 min.
