Barbeque Chicken over Strawberry Spinach Salad

Here's another recipe inspired by summer. The salad, a favorite side dish, since sharing it with friends in Minot AFB--summer BBQ's were the best there. I've just recently started adding the BBQ chicken to it--sweet and smoky combination is perfect.

4 chicken breast, marinated in favorite BBQ sauce
dash of salt and ground black pepper

bag of baby spinach leaves, torn
1 carton fresh juicy strawberries, hulled and halved
1/4 c. olive oil or canola oil
2 T. sugar or splenda or honey
2 T. apple cider vinegar
dash ground black pepper
dash Tabasco sauce

combine oil, sugar, vinegar, pepper and Tabasco and whisk well until combined.

Grill chicken breast and slice diagonally. Make salad and toss with dressing and place chicken on top. Enjoy!!

Optional: sprinkle with toasted sesame seeds or crunchy fried onions.
