Slow Cooker French Dip

Don't put your slow cooker away just yet...here's a recipe that's yummy all year long. This is probably one of my families favorite recipes.

French Dip

2 cans beef broth
1 pkg dry French onion soup mix
1 bottle of beer
1-3 lb. rump roast or round roast
dash black pepper
1 pkg. hoagie rolls
1 stick butter, optional
6 slices of favorite cheese (I usually use provolone)

Pepper the roast. Pour the broth, beer and dry soup mix in and stir until mixed together. Put the peppered roast into the slow cooker. Cook on high for 1 hour and then low for 6-7 hours longer. If you're in a hurry you can just start it on low and skip the high setting. Butter the hoagies and place cheese on them and toast. Slice the meat with the grain and place on the toasted hoagie. Reserve the juices in slow cooker for the au jus.

Note: I love to cook this meal on weekends when we are on the go so we can come home to a yummy, quick meal.
