Black Bean and Salsa Dip
This is a good appetizer and it's also great inside a whole wheat tortilla. If you're familiar with the Texas grocery store chain HEB, this recipe is from their Central Market cooking school.
1 can black beans, drained and rinsed
1 (8 oz) pkg cream cheese, cubed
1/2 c. salsa
1/4 c sour cream
1 tsp. chili powder
1 tsp. cumin
1 tsp. cracked black pepper
1 jalapeno, finely chopped
garnishes: finely chopped green onion or cilantro.
Note: Besides tortilla chips, a healthy alternative that's tasty is to dip in celery sticks.
In a slow cooker combine black beans, sour cream, cream cheese, salsa, chili powder, cumin, pepper and jalapeno. Cover and cook on high 1 hour. I have a small 2 c. crock pot that is the perfect size for this recipe.
