Pulled Pork

This recipe is delicious and easy...there are two ways to prepare it though. One easier than the other, but both slow cooked so not much to do once it's in the slow cooker. I prepared this last summer at our farewell bash in SLC...it was a hit.

1-2 pork tenderloins
or
3-4 lbs pork shoulder (Costco has it cut up and ready to brown and put into cooker)
oil
favorite BBQ sauce
1/4 c. water
ground black pepper

If you are using the tenderloins there's not much to it just put them in the cooker on low for 8-10 hours in a few cups of chicken broth. After the cooking period remove and cool a little and then shred the meat. Put the meat back in the cooker with a 1-1.5 c. BBQ sauce and cook on low for another hour or so. Quick method: heat the BBQ sauce up in the microwave and then put it on the meat.

If you are using the pork shoulder pepper and brown the pork on all sides using 2 T. oil and then transfer to the slow cooker. Put 1/4 c. water in the slow cooker with the meat and cook on low for 7-8 hours. Shred the meat and return to the cooker. Mix in 1- 1.5 c. BBQ sauce and cook on low for another hour.

Put shredded meat on rolls and serve. Great with cole slaw on the bun or on the side.
