Fish Tacos
Got this recipe from a friend when we were stationed in Texas. It's super easy to make and is so delicious. This ones pretty spicy so I serve this usually on a weekend night after the kids are in bed, and Ernie and I enjoy a quiet meal together.
Fish Tacos
mahi mahi or tilapia
shredded cabbage
corn tortillas, warmed
cilantro sauce
fish marinade: (like a paste)
2 T chili powder
3 T olive oil
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp cumin
2 cloves garlic
1 bay leaf, broken up.
Mix above ingredients into a paste and cover fish on both sides marinate.
cilantro sauce:
2 T water
2 T white vinegar
1 clove garlic, minced
1 jalapeno, chopped
1 1/3 c mayo
1/2 c fresh cilantro
1/4 tsp black pepper
Mix all of the ingredients in a blender or food processor. I use my stick blender it works the best. Refrigerate until ready to use.
Make cilantro sauce first and refigerate. Put fish in marinade for 1 hour or up to 1 day. Broil or grill fish until flaky. Warm tortillas and assemble tacos in this order--fish, cilantro sauce then cabbage.
Sounds weird, but taste so good. Wonderful with an ice cold beer!!
