Homemade Granola and Frozen Yogurt Cups


My kids could pretty much sustain themselves on yogurt and granola...sometimes separate sometimes together. They literally "eat me out of house and home" when it comes to these two snacks...so I found a few homemade recipes that are a bit healthier. Besides granola bars another favorite are the yogurt sticks (which I won't buy)because they are full of food coloring and high fructose corn syrup so I've also added my frozen yogurt cup recipe below. Enjoy!!

Homemade Granola

3 cups rolled oats
1 cup of shredded coconut (sweetened or not)
1 cup of chopped nuts (almonds, walnuts or pecans)
½ cup of seeds (sesame seeds, sunflower seeds or pumpkin seeds)
½ teaspoon of salt
½ a cup of honey or maple syrup
1/3 a cup of sunflower oil
¼ cup of apple or orange juice
1 teaspoon of vanilla
1 cup of chopped dried fruit (raisins, dried apricots, apples, cranberries…)


Heat oven to 350. Add all the dry ingredients together in a large mixing bowl. Stir it up. Add the wet ingredients together in a separate bowl and stir them up. Pour wet over dry and coat thoroughly.Lay the granola flat and even in a shallow pan (best is a heavy duty baking sheet with edges). Make sure it is not more than one inch thick or you may need to use two pans. Bake for about 20 minutes. You need to check and stir it up after about 10 minutes. Don’t let it burn. Transfer back to the bowl and stir in dried fruit once it’s cooled a bit. Serve with your favorite milk or yogurt. Store the rest in an airtight jar.

*I’ve been making homemade Granola Bars for the kids lately. I take the Granola and put it in a food processor with just enough flax oil, butter and honey so it can stick together. You can add a tablespoon or two of brown sugar here. Then I add a few organic chocolate chips and form it into a shape on my silpat that’s sitting on my cookie sheet. Bake for 10-15 minutes at 375.

Frozen Yogurt Cups

1 large tub of plain yogurt
1/4 c milk
fresh or frozen berries (strawberries, blueberries...)
1/2 c honey
2 T. protein powder ( I buy this in bulk at Wegman's)
small Dixie cups (like for the bathroom)

Mix all of the ingredients in a blender and pour into Dixie cups. Freeze. You can thaw them a bit by putting them into the microwave for about 20 seconds and then serve with a spoon.
