Summertime Cocktails

Since it's almost here, summer that is, here's a few cocktails to serve poolside.

Original Cosmopolitans
Pitcher:
2 Cups Good quality vodka
2 1/2 Cups Cranberry Juice
1 Cup Cointreau
1/4 cup Rose's Lime Juice

Pour into 2qt. pitcher and shake vigorously. If you have the pitcher with the built-in stirrer, it works best.
Place into freezer for at least 3 hours stirring occasionally
Pour into chilled martini glasses and enjoy!

2-3 Cosmopolitans:
In shaker, combine the following:
Ice
1/2 c. vodka
3/4 c. cranberry
1/4 c. cointreau
Rose's Lime to taste...usually about 1/8c.
Shake it like you mean it....about 30 secs

Top Shelf Margaritas

1 1/4 oz Sauza Commemorativo Tequila
1/2 oz. Prezidente Brandy
1/2 oz Cointreau
3 oz sour mix
splash of lime

Combine all ingredients in a cocktail shaker and shake vigorously for 1 minute. Pour in a salted or unsalted margarita glass and garnish with a wedge of lime.

A twist on the Mojito--Tejito.
4-5 mint leaves
1/2 lime, cut into three wedges
1 3/4 oz Sauza Gold or Commenorativo Tequila
2 spoonfuls of sugar, to taste
Mineral soda water, to taste
lemon-lime soda, to taste

Place mint leaves and lime wedges in a highball glass. Top with sugar and muddle. Add tequila and stir, Top with mineral soda water and a splash of lemon-lime soda.

Berry Good Punch
A non-alcoholic beverage for the kids.

1 4 serving box strawberry gelatin
1 cup boiling water
1 pint hulled strawberries
1 3 ounce can frozen lemonade concentrate
32 ounces cran-raspberry juice
2 cups cold water
28 ounces ginger ale
2 bags frozen mixed berries

Place the gelatin and boiling water in a large punch bowl and mix until smooth. Puree the strawberries in a blender and add to the gelatin mixture. Add the lemonade concentrate, cran-raspberry juice, and water. Mix well. This mixture can be made well in advance and chilled until ready to serve. Before serving add the ginger ale and mixed berries.

Makes 12 servings.

  1. Both raspberry and lime are two of my favorite flavors but it never dawned on me to mix them, I'll have to try a virgin version (try to say that ten times fast) of a "Cosmopolitan." My mouth is watering already.
