Grecian Grilled Chicken Salad

I serve this salad at least once, if not twice a month...and have been for about three years. It's easy, healthy and delicious.

I believe it's a Pampered Chef recipe.

2-3 chicken breast grilled, sprinkle with salt and pepper.
1 bottle creamy Caesar-style dressing (I use Ken's Steak House)
1-2 cloves garlic, minced
1 lemon, juiced
1 head of romaine lettuce
1 zucchini
1 red onion
black olives
artichoke hearts
1 red or orange bell pepper
parmesan cheese, grated (not the powder stuff)
parsley

Salt and pepper chicken and grill or saute on the stove. I use my Pampered Chef grill pan and grill the chicken. Cut into strips or bite size pieces before hand to make it easier to cook through. Once chicken is done take off stove and place in a bowl, top with parmesan cheese and sprinkle with parsley.

Dressing:
Combine garlic and lemon juice with 1 c. of dressing. Stir to mix well. Dressing should be a little watery from the lemon juice.

Make salad, top with chicken, dressing and a bit more parmesan cheese and serve.
